Dr. Dilip Ghosh has received his PhD in biomedical science from India & post-doc from USDA-ARS, HNRCA at Tufts University, Boston. He is an international speaker, facilitator and author and professionally associated with Nutriconnect, & Trigonella Labs, Australia; Adjunct-Industry Fellow, NICM Health Research Institute, Western Sydney University. He is a fellow of American College of Nutrition (ACN), professional member of Australian Institute of Food Science & Technology (AIFST), an advisor and executive board member of Health Foods and Dietary Supplements Association (HADSA), & The Society for Ethnopharmacology, India (SFE-India) and also in editorial board of several journals. His research interest includes oxidative stress, bioactive, clinically proven functional food and natural medicine development, regulatory and scientific aspects of functional foods, nutraceuticals and herbal medicines.
Dr. Ghosh has published more than 100 papers in peer reviewed journals, numerous articles in food and nutrition magazines and books. His most recent two books, “Pharmaceutical to Nutraceutical: A Paradigm shift in disease prevention” & “Natural Medicines-Clinical efficacy, Safety and Quality” under CRC Press, USA has been published in 2017 & 2019. His latest book, “Nutraceutical in Brain Health & beyond” is just published by Elsevier/Academic Press

Arman Zargaran (b. 1985) has completed his PharmD and PhD degrees (on traditional pharmacy) in Shiraz University of Medical Sciences (2010 and 2015, respectively). He is assistant professor of traditional pharmacy and also history of medicine and vice for Public Relations in Vice-Chancellor of international affairs at Tehran University of Medical Sciences (TUMS). Also, he is vice for international affairs, Office of Persian and Complementary Medicines at Iranian ministry of health.
His main research interests are history of Persian medicine, ancient Persian medicine, formulation and standardization of traditional and natural products and ethnopharmacology.
He is also the member of International Academy of the History of Pharmacy; President of Iranian Society for the History of Pharmacy (as member society of International Society for the History of Pharmacy); member of Iranian Academy of Medical Sciences, member of UNESCO Chair of History of Traditional Medicine in Iran, associate member of International Headache Society and member of Traditional Persian Medicine Association. He has published more than 150 papers in reputed journals and has been serving as an editorial board member and reviewer of many peer reviewed journals. His h-index is 18 according to Scopus report (2020).
He was awarded as top PhD student of Iran (2012), winner of Razi Medical Sciences Festival (2013); winner of Tabari Medical Sciences Festival (2013); receive International Academy of the History of Pharmacy medal and diploma (2017); Top professor of School of Persian Medicine, TUMS (2017), for international awards and activities at TUMS (2019), Top 100 faculty members of Iran (Saramadan Elmi - 2020), etc.

"The Effects of Oatmeal in Diabetes and Related Metabolic Disorders"
Mahsa Jalili is an assistant professor in Clinical Nutrition at Department of Nutrition, Exercise and Sports, University of Copenhagen. She has done her bachelor, master and PhD in clinical nutrition and diet therapy. Her master thesis titled the effect of antioxidants on blood antioxidant status and clinical outcomes in patients with rheumatoid arthritis. The aim of her first PhD was to investigate about the supplementation with vitamin D and soy isoflavones in patients with irritable bowel syndrome. She moved to Norway in 2014 and started her job as a research assistant at St. Olav Hospital, Trondheim. Later, she started herresearch project in medical technology at Department of Biology, NTNU. The topic of the recent project was effects of different dietary ingredients on the immune responses and antioxidant status in Atlantic salmon (Salmo salar L.): possible nutriomics approaches. She learned a lot about molecular biology, bioassays, data analysis and immunology in her recent project. Their research group used Atlantic salmon as an animal model to study the association between dietary intake, antioxidants, and innate immune responses at transcriptomics level.
She enjoys of learning new techniques, go deeply into signaling pathways, and connect clinical symptoms with molecular mechanisms via omics studies. Metabolism, immunity, and gastrointestinal disorders are her favorite topics.She works on clinical nutrition and metabolism in her current job.

Leila Azadbakht is PhD in Nutritional Sciences and she is the professor in nutritional sciences at the department of community nutrition, school of nutritional sciences and dietetics as well as Diabetes Reseach Center, Tehran University of Medical Sciences. She had served as the Dean of Food Security Research Center in Isfahan University of Medical Sciences and vice dean for research deputy in school of nutrition and food science Isfahan University of Medical Sciences for several years. She is now a member of editorial board in several international journals in the field of nutrition. Dr. Azadbakht is now the vice dean of research deputy in the school of nutritional Sciences and dietetics. She is interested on the field of assessing the relationship between dietary intakes and dietary patterns and non-communicable diseases such as diabetes, metabolic syndrome and obesity. She has published 310 papers in peer reviewed ISI indexed journals in the field of nutrition yet and has conducted 105 research projects mostly focused on nutrition and non-communicable diseases.
